Ray has worked as a chef since 1982, from a commis chef at The White Gables Hotel in Hillsborough to senior chef de partie in St Andrews in Scotland, to sous chef in Bermuda at the Fisherman’s Reef and Restaurant. With such a colourful culinary curriculum vitae, it’s no surprise he has won the Taste of Ulster Award. Furthermore, when he was the Executive Chef in Tullylagan Country House Hotel, they won the Best County Hotel Restaurant Award.
