We are all familiar with simply lighting the barbecue with charcoal or gas, but cooking with wood is a truly primal experience. It’s about mastering fire management, understanding different timbers, and connecting with our native woods. We are delighted that Hal Dawson, Worshipful Master Fishmonger, will join us to share his expertise in this immersive one-day course.
You’ll explore all aspects of cooking with wood, with everything prepared over live fire and the opportunity to cook on a smoker, wood-fired pizza oven, open fire pit, asado grill and plancha.
What to expect:
- Learn how to build, light and manage a fire
- A blend of cookery demonstrations and hands-on experience
- Plenty of dishes to enjoy throughout the day, ending in a BBQ feast
Your day includes:
- Breakfast bacon sandwiches with tea & coffee on arrival
- Meat preparation, including pork shoulder and a variety of cuts
- Brisket 101 – trimming, dry rubs and smoking techniques
- Making a campfire stew to enjoy later
- Smoking a ham hock to take home
- Vegetable cooking using a range of techniques
- Planking fish and preparing sauces and accompaniments
- A final supper featuring everything created together
Expect to leave with a full belly, the smell of wood smoke, and a new passion for cooking over fire. Please bring reusable containers for any leftovers.
